Butternut Squash Breakfast Hash
Butternut Squash for breakfast??? Yes!
I know, that sounds crazy but hear me out, instead of making a regular potato hash, change it up by using butternut squash.
This recipe for Butternut Squash Breakfast Hash by Fit Foodie Finds is packed full of flavor and my favorite part, besides the squash is the spinach! I’m a sucker for greens with my breakfast.

Butternut Squash Soup
Normally I’d reserve soup for dinner, but when made in advance, soup for lunch can be so amazing.
Butternut squash soup is one of my favorite soups to make, especially when I top it with slightly crispy sautéed spicy sausage. Oh so delicious!
This recipe for Butternut Squash Soup by Kate from Cookie and Kate is super easy, packed full of flavor and can be made in advance and even frozen into individual servings and pulled out of the freezer when you need a quick meal on the go.
Dinner with a Twist
Butternut Squash Pasta Carbonara
Who doesn’t love pasta carbonara? But then to take it to the next level by adding butternut squash… my mouth is already watering.
This recipe for Butternut Squash Pasta Carbonara by Sam from Ahead Of Thyme takes a traditional pasta carbonara and puts a twist on it.
She’s not just adding roasted cubed butternut squash to the pasta when tossing just before serving, but Sam actually blends the squash and incorporates it into the actual sauce!
Mind blown!
This twist gives the sauce an added creamy robust flavor while preserving the esthetics of a traditional recipe.

Can You have Pie for Every Meal?
September is officially here! Can you believe it? Wow the year is swiftly moving along.
I was playing in the backyard with Brucey boy the other day, and I found an apple that fell off our neighbor’s tree. The apple reminded me of homemade pies.
Then this question popped up: “Can you have Pie for Breakfast, Lunch and Dinner?”
YES, yes you can!
For this week’s Breakfast, Lunch & Dinner we’re sharing with you different pie recipes that can be made for breakfast, lunch and dinner.
Side note, pie is also referred to as a quiche or a tart!

Breakfast
Spinach Quiche
The idea of having “pie” for breakfast sounds so rebellious, I just love it!
When I hear pie, I think about apple pie or one of my favorites, a mixed berry pie.
But pie can also be a breakfast dish, or in this case a breakfast quiche.
I absolutely love spinach with my eggs, but when half of it is enveloped with a deliciously flakey and butter crust, oh wow does that just make me happy!
This Spinach Quiche recipe by Jenn Segal from Once Upon a Chef is to me the quintessential breakfast.
It has depth with nutmeg, it has a little kick with cayenne, it’s creamy with cheese and it’s chock full of spinach, what more could you want? Simply divine!

Lunch
Walnut Citrus Tuna Hand Pie
For lunch many of us are on the go, so I wanted to find a hand pie to share with you. You know, something easy to grab and go!
I love a good tuna sandwich and this recipe for Walnut Citrus Hand Pies by Renée from The Good Hearted Woman is the ultimate culmination of a tuna sandwich and a deliciously moist hand pie.
When I make tuna sandwiches, I use celery for the crunch factor, in Renée’s recipe she uses both Walnuts and celery, extra crunch factor, even though everything is sautéed.
This recipe is great, you get the choice of making the pie crust yourself or using premade, and then you use a fun pie maker to actually fold the crust, just so great!
Dinner
Curry Chicken Pot Pie
There are oh so many options for a dinner pie. Seriously the options are limitless!
After much deliberation, we decided to share with you a classic, chicken pot pie, but with a twist.
Chicken Curry Pot Pie! This recipe is brought to you by Chris Morocco from Bon Appétit.
Rather than just the traditional ingredients of carrots, peas or celery, onions and so on; this recipe uses some fun ingredients like green apples, butternut squash and daikon.
It’s a little out of the box, but packed full of flavor and uniqueness to kick this traditional dish up a notch, as Emeril Lagasse would say.

This Dalgona Coffee Recipe was super popular last summer. We had so much fun with it we wanted to share it again this summer!

Lunch
Gazpacho Salad
Sticking with the summer theme and keeping things cool, we thought you’d enjoy a delicious and easy summer Gazpacho Salad.
Normally Gazpacho is a cold or cool soup, packed full of flavor, that’s blended in your Vitamix.
Well, this particular recipe for Gazpacho Salad doesn’t require blending all the ingredients together, just the ingredients for the dressing.
My recommendation: The Neelys suggest whisking the Red Wine Vinaigrette, I prefer to blend these ingredients using my Vitamix. The ingredients emulsify together nicely and it’s a lot less work!

This is something we’ve never written or posted about, but it was brought to our attention that there are quite a few folks looking for cocktail recipes without the alcohol, aka Mocktails.
So, we thought we’d take a stab at making and sharing some with you. This week on our Sunday LIVE happy hour we’ll be featuring Mango Mocktails.

Spicy Corn Carbonara
We did some super tasty grilled corn on the cob the other night on our Traeger and I had some left-over corn. So, I went searching for something familiar and tasty to make with the corn.
I came across Erin’s recipe for Spicy Corn Carbonara.
I’m such a sucker for any kind of Carbonara, let alone a spicy version that uses the delicious leftover corn I need to use.

EASIEST Homemade Almond Milk
One of my favorite things to make is homemade almond milk, it’s so tasty and SUPER EASY to make.
I especially love to add a little vanilla and a smidge less water if I’m making a thicker almond milk for coffee creamer.

Creamy Cucumber Salad
One of my favorite recipes my Dad used to make when I was a kid was creamy cucumber salad!

Traeger Shrimp & Veggie Skewers
Our Traeger gets used year-round, but especially during the summer, we make an extra effort to prepare a lot of our meals using the grill to keep the heat out of our house.
Back in June we shared a Pineapple Veggie Skewer recipe with you, wow was the recipe for Chimichurri sauce so delicious!
We liked those veggie skewers so much we thought we’d share this recipe for Grilled Shrimp and Veggie Skewers with you.
You’ll notice the recipe uses a regular grill, so if you have a Traeger, you’ll simply cook them on your grill as you would any other skewer!
