How to make Pesto Scrambled Eggs with Bacon
Mmmm Delicious Pesto Eggs!
I love to combine the fresh flavors of pesto with my morning eggs, and who doesn’t love some crispy bacon with that combo!
Yes, we do make quite a bit of plant-based meals in our house, but we do love some bacon with breakfast or brunch!
Here is the recipe for Pesto Topped Soft Scrambled Eggs with Bacon over Toasted Baguette. This recipe serves the pesto over top the soft scrambled eggs.
I go back and forth, sometimes I’ll mix the pesto in with the eggs, while I’m cooking them, other times I’ll garnish on top; so, serve them how you’d like!

Pesto Caprese Sandwich
Last week we wrote about a Caprese salad, this week we’re turning that salad into a Pesto Caprese Sandwich.
This Pesto Caprese Sandwich recipe is by Cookie & Kate and uses a creamy basil sauce instead of straight pesto. Feel free to make the pesto with the mayo or sub in regular EVOO if you didn’t want a creamy sauce.
Oh and you could even turn this into a panini by pressing the sandwich!

Kale Pesto with Whole Wheat Pasta
I really Love Pesto, but sometimes it’s hard to come by a big bunch of basil, so when that time comes, I sub in Kale for Basil.
I’ve done this a few times, and I’m always pleased with the wonderful flavors that come through when using kale.
This recipe for Kale Pesto with Whole Wheat Pasta by Chris Morocco at Bon Appetit is delicious and a crowd pleaser!
We like to make ours with homemade pasta, however if that's not your jam, definitely buy whole wheat pasta.

Breakfast Carbonara
I never thought I’d be writing a sharing a pasta breakfast recipe, but here we are!
This Breakfast Carbonara recipe by Alton Brown is spectacularly delicious! We make homemade pasta on a relatively regular basis in our house, and when I came across Alton’s recipe, we just had to try it!
WOW is it delicious, and very easy to make. The brightness from the orange zest is spectacular!
Also, if you don’t have breakfast sausage, feel free to sub in bacon, we actually used both.
I do hope you give this a try; you’ll be happy you did!

Ultimate Caprese Salad
Caprese Salads are one of the most amazingly delicious salads around. They’re so fresh and bright, filling yet still light and most importantly super easy and fast to make.
This Ultimate Caprese Salad recipe is packed full of flavors and is super easy to make. The recipe calls for buffalo mozzarella, sometimes this can be challenging to find, so if you’re not able to find buffalo mozzarella, regular mozzarella will also be a good substitute.
Serving this with garlic bread to sop up all the delicious juices would be my recommendation.

EASIEST Summer Gazpacho
I’m definitely not a connoisseur of gazpachos but THIS gazpacho has got to be the BEST recipe I’ve ever had! And I’m not saying that lightly!
This Summer Gazpacho Recipe is incredibly flavorful and the BEST part is it’s SUPER EASY to prepare.
Normally soups don’t impart the best flavor until the following day, well this soup is the exact opposite and takes no time at all to make.

Red White and Blue Parfaits – Very Patriotic!
What better way to celebrate this Red White and Blue weekend with themed Red White and Blue Parfaits!
It’s all about the presentation for this recipe. It’s SUPER important to have the proper serving glass to see all pretty colorful layers.
The Parfaits recipe calls for regular or Greek yogurt, I personally am a big fan of Greek yogurt, it’s a texture thing for me.
This time of year, should be really easy to get fresh blueberries and strawberries, but if you’re in a pinch, you can thaw frozen ones and use them in this presentation. They’re not going to be as firm as fresh but they’ll do in a pinch!

Club Sandwich - 3 MEATS
I love the IDEA of a club sandwich, but I it’s definitely not something I make at home very often simply because it’s such a LARGE sandwich. What can I say, I’m a grazer.
That said, this Club Sandwich Recipe is PERFECT if you’re having company over and you want something delicious and easy to munch on.
In this particular recipe Marjorie is using 3 meats: turkey, ham and bacon. If you wanted to swap them out for different types, or even make it a veggie club sandwich, certainly feel free to make adjustments as you like.
You could even add avocado! I’m such a sucker for avocado, seriously - all the time!
One thing I would suggest, is to use Dave’s Killer Bread. I don’t eat bread all that often, but when I do, it’s Dave’s Killer Bread.

Cheeseburger Soup Recipe – What to do with your leftovers?
It’s a holiday weekend and I know so many families will be firing up their grills, so I figure you probably don’t need another burger recipe.
But what you will likely need is a recipe for turning your leftover hamburgers into something tasty!
This is a very rich soup with lots of delicious butter, cream, and cheese; definitely a treat every once in a while.
If you’re looking for a lighter soup, you could make this soup without the whole milk or half and half, and sub in blended dried mushrooms for a creamy texture.
I’d call this soup comfort food!

SPECIAL SURPRISE - Breakfast, Lunch & Dinner - June 25, 2021
Happy Friday!
This week we’re celebrating my birthday and giving you all a Big SURPRISE!
First off, I wouldn’t normally share that it’s my birthday and second this recipe I’m about to share with you is one I’ve held very close to me for a very long time and one don’t typically share.
But, since you are my loyal readers, I wanted to give you something EXTRA special on this special day.
What makes this recipe so significant to me, is this recipe was my starting point when I used to bake and sell scones on my online bakery and to the coffee shop just across the street from Sony Pictures, where I used to work.
These scones were THE scone to buy and would regularly SELL OUT!
I love to celebrate life, and thought I’d share a little of me with you on this special day!

SURPRISE - Dried Cranberry, Walnut and Lemon Scones!
Yes, there are many different types of scones out there and I’ve eaten A LOT of them, but I must say I’m certainly bias when it comes to any other scone other than the ones I make.
Ha, at least I know that… LOL
I’ve tried different recipes and to me, this recipe for Dried Cranberry, Walnut and Lemon Scone is the VERY BEST!
I do hope you try it and would LOVE to read your feedback.

Roasted Beet & Goat Cheese Salad
I’m such a sucker for EVERYTHING in this Roasted Beet and Goat Cheese Salad.
The slight pepperiness from the arugula adds an unmistakable brightness to the salad.
The walnuts add a nice crunch while the cheese adds flavor and a creaminess that’s just the right punch, and of course there’s the star of the salad, beautiful beets.
TIP: If you wanted to save a little time, you could prepare the beets the night before.
Dinner
Cream of Asparagus Soup
Veggies turned into a creamy soup just makes me happy! This recipe for Cream of Asparagus Soup is so delicious and really quite simple to make.
TIP: If you’d like to cut back on some of the dairy ingredients, feel free to sub in cashews and dried mushrooms for some of the milk and or sour cream. The mushrooms will add a hint of umami flavor to the soup.

King’s Hawaiian Bacon Egg Casserole
Have you had Hawaiian Bread before?
Oh, wow is it tasty!
This King’s Hawaiian Bacon Egg Casserole kicks it up a notch or maybe even two!
TIPS:
- Add more spices, more dry mustard and more Worchester sauce.
- Though my household with COMPLETELY disagree, the meat does not have to be Bacon. It can be leftover ham, deli meat, sausage or whatever kind of meat you have in your fridge.
This recipe is VERY forgiving, so if you’d like to change the portions or an ingredient or two, feel free to!

Mandarin Orange Salad - LUNCH IN 10 MINUTES!
“Fresh, Sweet and Loaded with Flavor.”
Jamielyn Nye from I Heart Naptime created a killer Mandarin Orange Salad that’s not only delicious but is packed full of flavor and nutrition, plus it’s another quick lunch for busy household!
This recipe calls for almonds, but you can really use whatever kind of nut strikes your fancy! Pepitas would also be a great addition to this flavorful salad.

Hawaiian Huli Huli Chicken – Mouthwateringly Delicious

I love a good cinnamon roll, especially when they’re warm, gooey and hot out of the oven… Mmmmm – Yum!

Instant Pot Cauliflower Thai Curry - So EASY and Super Delicious
If you’re looking for a delicious meal that TASTES like someone has been standing over the pot stirring in your kitchen for hours, yet it really only took 20 MINUTES than this is the recipe for you.
This Cauliflower Thai Curry really knocked our socks off. It’s so flavorful and delicious you’ll want any leftovers all for yourself!
I served this over a bed of quinoa and brown rice made by Seeds of Change. You can certainly serve this over white rice, basmati rice or another grain that suits your fancy.

This week we hosted puppy play date and dinner, and my inspiration for dinner was a beautifully golden pineapple.

I LOVE a deliciously ripe, sweet, yellow pineapple. This juicy fruit makes me feel like putting on my bikini and lounging by the water with a cocktail and a good book!
Below are 3 delicious ways to use pineapple in Breakfast, Lunch and Dinner, plus a bonus recipe for you to try too!

EASY Pineapple Carrot Muffins – Mmmm Delicious
This easy Pineapple Carrot Muffin recipe is going to put a smile on your face!
Super tasty and easy to make.
I especially love to cut the muffin in half, toss it in my toaster oven and give the halves an extra toast before spreading a little butter and enjoying with my latte in the morning.
Note: In the recipe feel free to sub in freshly crushed pineapple if you’d like rather than canned.

Pineapple Cucumber Salad
Cucumber and Pineapple go together so well!
This Pineapple Cucumber Salad is super fresh and easy to toss together, I’d even suggest serving this over a bed of arugula or baby greens.
If you wanted to put a little Mediterranean twist on this salad you could swap out the cilantro for mint!

Chimichurri Pineapple Veggie Skewers & a Pineapple Screwdriver
Holy Cow – Amazingly Delicious!
At least once a week we have a plant-based dinner and this past week I really knocked it out of the park with this recipe.
These Chimichurri Pineapple Veggie Skewers are super easy and so satisfyingly filling and delicious.
This delicious recipe was developed by Kasey from Well-Fed Soul.
I did make one adjustment, also included Field Roast Smoked Apple & Sage Plant-Based Sausages onto the skewers. These added such a great flavor to the dish!
As an extra bonus you can also pair your meal with a Pineapple Screwdriver cocktail.
Note: For cooking the pineapple skewers, the recipe suggests to cook them on the grill, we cooked them on our Traeger and they turned out fantastic!

Bell Pepper Egg Boat Recipe & Lemon Blueberry Pound Cake
I love stuffed bell peppers, which is something I’d usually make for dinner, but I ran across this recipe for Breakfast Bell Pepper Egg Boats and just had to share it!
Do you enjoy bell peppers? In my experience people either love them or hate them, I’m a lover for sure!
My Mom makes the most amazing stuffed peppers, just as her mom did, so I now make them, and with this recipe now you can enjoy a breakfast version of stuffed peppers!
You could also try making this Keto Lemon Blueberry Pound Cake to enjoy with a cup of coffee or espresso on a lazy Sunday morning.

Spinach Strawberry Salad – Simple, Delicious and Satisfying
Just yesterday I saw a U-Pick sign for strawberry picking near my house, so exciting, we’re getting into the fruit picking season and all the delicious recipes that correlate.
I absolutely LOVE all the ingredients in this Spinach Strawberry Salad. I would suggest topping the salad with a little feta cheese to take it to that next level.
Just thinking about this salad makes me hungry!
Dinner
Traeger Grilled Balsamic Chicken Thighs with Broccoli Tots & Chocolate Panna Cotta for Dessert – Are you Hungry Yet?
I do love making food on our Traeger, the flavors are just fantastic and it really kicks any recipe up a notch when you cook it on the grill.
This recipe for Grilled Balsamic Chicken Thighs give instructions to cook on your traditional grill, which can be done if you don’t have a Traeger.
Everything cooks so well on a Traeger that you could even cook the Broccoli Tots on the grill too; or use an air fryer if you didn’t want to use your grill or your oven.
And for Dessert…
Who doesn’t love a good dessert? Heck, sometimes we even order dessert as the appetizer in a restaurant, true story! (Though occasionally the servers are confused and have no idea what to do with that, it’s quite funny.)
This recipe for Chocolate Panna Cotta is a little more involved but totally worth the effort, especially if you’re having some friends over for dinner.

I know, you’re probably thinking WHAT???
Eggplant Bread? I promise I haven’t lost my mind.
The texture of eggplant really isn’t too different from zucchini and why not add this great veggie to a delicious Eggplant Zucchini Bread Recipe .
I LOVE to eat a slice individually toasted in my toaster oven with a little butter or coconut oil spread over top. Who can resist those crunchy toasted edges?
NOTE: SUPER IMPORTANT – this recipe is for TWO loaves of bread, so you can cut it in half or make two and freeze one.

Broiled Eggplant Sandwich
Freshly toasted bread with an avocado schmear, cheese, cucumber, roasted red peppers, finely sliced red onions… need I say more?

I love all the different levels of flavors this sandwich gives. You could even “kick it up a notch,” as Emeril Lagasse would say, by adding some crispy bacon if you’d like.

You know when you have bananas that don’t look inviting anymore, but they’re not BAD so you don’t want to throw them away? I certainly have and that’s when I do one of two things:
- Peel and freeze the bananas for a later use
- Make Chocolate Banana Bread
I’ve tried several different recipes and this chocolate banana bread recipe by two peas & their pod is BY FAR my ABSOLUTE FAVORITE!

Spring Goddess Sandwich – on an EVERYTHING BAGEL
I’m such a sucker for a delicious Everything Bagel, they’re just so delicious! Wouldn’t you agree?
We’ve featured Sylvia’s recipes before, she does such a great job with all her recipes and this Spring Goddess Sandwich is no exception.
Feel free to change it up a bit and use arugula instead of sprouts, tuna salad instead of chickpea salad and regular mayo instead of the vegan version if you’d like.
Make it your own and enjoy!

Traeger Chicken – Super EASY and So Delicious!
One of our favorite tools at home are your two Traeger Grills. Yes you read that right, two!
We have a smaller one for everyday use, and the big boy for when we have 3 pizzas that need grilling; or pre COVID when we had 30+ people over and lots of side dishes cooking all at once.
One of the easiest recipes we love to make on our Traeger is Grilled Chicken.
Seriously it’s never been so easy, the hardest part is to RESIST opening the grill lid and peaking in on the chicken cooking.
The Smoked Chicken with Apricot BBQ Glaze can also be made with only one whole chicken instead of two.
It’s so delicious! You can also use other jams you have on hand.

Surprisingly Easy Chile Relleno – it’s a MUST Make
I Love chile relleno, I’ve never made it and always thought it would be super complicated to even think about making this myself.
That's until I came across Sylvia’s recipe.
Sylvia Fountaine is a chef located here in the Pacific Northwest and I somehow stumbled upon her Chile Relleno Recipe. She does such a great job breaking down the steps making it super easy to make.
I even made the Vegan Tofu Ricotta, that was super delicious and we’re not vegan! Though, a few nights a week we do try to eat plant-based meals.
